This was a big hit breakfast on retreat – served with fresh fruit salad and kefir. A second big bowl was in demand later in the day for an afternoon snack!

Best prepared the night before, or allow at least 15 minutes to allow the ingredients to soak together before serving.

Serves 4

120g rolled oats
400ml nut milk (unsweetened almond or hemp)
1 tbsp pumpkin seeds
1 tbsp sunflower seeds
1 tbsp dried fruit (cranberries, sultanas or chopped dates)
2 tsp chia seeds
1 tbsp chopped nuts (pecan, hazelnut etc)
1 grated apple
1 tsp maple syrup or honey

To serve:
kefir, natural yoghurt or almond milk
Fresh fruit salad (raspberry, blueberry, banana, mango, pear etc)

Mix all of the ingredients together, stir well and leave to stand for at least 15 minutes, preferably overnight.
Adjust the sweetness if required
Add a portion to a bowl and invite others to share (or keep it for yourself for later!). Top with fresh fruit, kefir, yoghurt or almond milk.
